The mouth and nose of the pig form the face - the front of the head. The cavity in the nose plays an important role - in it the incoming stream of air is studied for aromas, it becomes warm and moisturized. It is connected through the nostrils with the environment, through the choans (internal openings) - to the throat, along the lacrimal-nasal canal - to the paranasal appendages (sinuses) and the conjunctival sac.
In the structure of the nose there are:
- root (on the forehead);
- tip (tip);
- back (arch);
- side parts.
The apical part of the pig is mobile, is a proboscis (piglet), which is merged with the lip. There are two holes in it - the nostrils - the "gate" in the nose.
The skin between the nostrils and around is called the nasal mirror. There is no hair on it, but there are grooves dividing it into small lobes with protein glands. They moisturize and cool the piglet's nose.

Bones and cartilages are involved in the formation of the nasal dorsum. It smoothly passes into the side parts, and then into the root, which has a lattice plate at the base (perforated by holes).
The passage inside the nose is relatively narrow, long and slightly widening near the ventral wall. It is divided into the vestibule and the internal cavity with lining its mucous membrane. This shell is smooth, but near the side walls and the root of the nose - in the crease, forming the nasal conchs. They each have 4 nasal passages, which are responsible for smell and respiratory function.

Pigs, due to their natural olfactory ability, have always been the first assistants in the search for truffle delicacy.
As a rule, these are specially trained animals, capable of sniffing mushrooms in the cobs under the ground, up to 1 m. The first mentions of truffle pigs are found in ancient Rome.
Now for searches of valuable mushrooms often use not pigs, but dogs. They do not get tired and do not try to eat what they find, unlike pigs. In addition, sows when finding mushroom treasure begin to dig the ground hard, violating the mycelium. After that, it takes a long time to recover - 2-3 years.
Interestingly, the smells of truffles are especially strong at night, therefore, they are hunted at dusk.
The search for truffles should begin at the end of the summer, when they are considered ripe. These mushrooms like to settle on large, open meadows or edges in an oak forest. They grow in large families. It is possible to determine the truffle place by the gray-ash color of the earth, faded grass, moss and tubercles.
In sunny weather, truffle mycelium is given out by yellowing flies swarming above it, which are attracted by the smell of mushrooms. Sometimes you can see the land under the ground - forest animals are trying to find a delicacy.
Truffle young pigs before the hunt wear a pyramid from velvet so that they do not sniff out odors, and a collar. You can pull a muzzle on a piglet, - so he will not be able to eat the mushrooms found. You can distract from this with the help of your favorite treats.

Pigs as holders of fine flair began to be used not only to search for truffles.
